Baked Custardy Rice Pudding
You either like rice pudding, or you don’t, right? This is a good old-time pudding.
Set oven at 375°
1/4 to 1/2 cup short grain rice
Pinch salt
2 cups milk
Place rice in pot with salt and milk. Simmer on low heat (or use double boiler) until rice is soft, about 15 minutes.
4 eggs
1/2 cup sugar
1 cup milk
Nutmeg
Mix eggs and sugar, add to rice mixture. Add milk and nutmeg.
Pour into greased casserole. Set into larger pan with 2” boiling water in bottom.
Bake 1 hour or until firm and browned on top.
