Swedish Tea Rings
This was marked “Good” by Mom in the St. James cookbook. I see it was submitted by Nora Bishop, Donna and Janice's mom from across the road on Agar Crescent. But are these tea ring things really Swedish? Only Birgitta knows for sure.
Set oven to 325°
1/4 cup brown sugar
1/2 cup butter
1 egg yolk
Cream above together.
1 cup flour
egg white
chopped nuts
Blend in flour. Shape into balls, dip in slightly beaten egg white, roll in chopped nuts. Put on a greased pan, press a hollow in centre of each. Bake for 5 minutes, remove from oven. Press again in centre and return to oven 15 minutes.
While still warm, fill centre with jelly or jam.
