Stephanie’s Cookies
An oatmeal cookie sandwich filled with fudge! These cookies made our office of technical writers duke it out at the annual cookie exchange, trying to get our hands on them.
Set oven to 375°
Cookie
1 cup shortening
1 cup brown sugar
Cream together in large bowl.
1/2 cup sour milk
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp. vanilla
Add to first mixture.
2 1/2 cups oatmeal
2 1/2 cups flour
Mix in. Roll flat to about 1/2” thick. Cut in rounds and bake 5 minutes on buttered cookie sheet.
Fudge filling
2 cups brown sugar
4 tbsp. soft butter
1/2 cup cream
Cook on stove top until bubbles snap for 1 minute. Take off heat and let cool for about 5 minutes.
1 tsp. vanilla.
Icing sugar, about 1 lb.
Beat in vanilla and icing sugar until thick but spreadable.
Wait until a slight crust forms on top before spreading on one cookie and topping with a second to form a cookie and fudge sandwich.
