Ben’s Old Favourite Coconut Squares
I take these to Christmas parties and pot lucks. They’re prettiest in pink icing but Ben used to say, “It’s got to be chocolate.”
Set oven to 350°,
Butter a 9” square or 9”x 13””pan.
Bottom
1 1/4 cup graham crumbs
1/2 cup butter
1/2 cup brown sugar
1/3 cup flour
Combine in bowl and and press into buttered pan. Bake 10 minutes.
Top
2 cups coconut
1 11-oz. can condensed milk
Combine in separate bowl and spread over the bottom. Bake 20 minutes. Let cool.
For pink icing
2 cups icing sugar
4 tbsp. butter
3 tbsp marachino cherry juice, or
few drops red food colouring and 3 tbsp. milk
Beat together and spread. Cut into squares
For Chocolate Icing
2 cups icing sugar
1/4 cup cocoa
4 tbsp. butter
3 tbsp. milk
Beat together and spread. Cut into squares.
