Fruit Cocktail Cake
This one came from an older Best of Bridge cookbook, and became a family favourite.
Set oven to 350°
Butter a 9” x 13” pan
2 eggs
Beat eggs slightly.
1 1/2 cups white sugar
2 tsp. baking soda
1/2 tsp. salt
14 oz. can fruit cocktail with juice
Add all to eggs and mix.
2 cups flour
Add flour and mix. Bake for 45 minutes. When it cools down a bit, poke the end of a wooden spoon or the blade of a knife into the top of the cake to make lots of holes so the icing sinks in.
Glaze
3/4 cup white sugar
1/2 cup cream, or milk will do
1/2 cup butter
Put in saucepan and bring to a boil.
1 tsp. vanilla
Mix in with rest and pour over hot cake.
