Lemon Squares
Mom's recipe, and it makes 4 dozen squares.
Set oven to 325◦.
Bottom crust
2 cups flour
1/2 cup icing sugar
Mix.
3/4 cup soft butter
Add and cut in until crumbly, similar to pastry making.
Press into greased 13" x 9" pan.
Bake for 15 - 20 minutes.
Filling
4 eggs
2 cups white sugar
1/2 cup lemon juice
1/4 cup flour
1 tsp. baking powder
Beat until smooth and light then, pour over crust.
Bake 25 - 30 minutes until set and golden.
Cool and dust with icing sugar.
