Brown Sugar Shortcakes
This was the one Mom used her pretty Christmas cookie cutters on.
Set oven to 275°
1 cup soft butter
1/2 cup brown sugar, packed
Cream together.
1 3/4 cups sifted flour
1/4 cup cornstarch
Sift together and blend into rest in bowl. continue working with hands until dough is smooth and satiny. Shape into round and chill.
sugar to decorate
Roll dough 1/4” thick and cut into small rounds. Put on ungreased cookie sheet, sprinkle with sugar and bake 20 to 30 minutes, until firm to touch and lightly browned on bottom. Makes about 4 dozen small cookies. Mom says “makes 12 diamonds, 16 small rounds, 14 holly leaves””.
