Mom’s Rolled Pastry
There has never been a better pastry! You can use lemon juice instead of vinegar if you like.
1 lb. lard
5 cups flour
1 tsp. salt
1 tbsp. sugar
1/4 tsp. baking powder
In a large bowl, blend above with pastry blender until mealy.
1 egg
2 tbsp. vinegar
cold water
In a measuring cup, mix egg, and vinegar with fork. Mix in enough water to bring level up to one cup. Add slowly to flour mixture, mixing well. Roll into balls of a size that will make one pastry shell and wrap each in waxed paper and refrigerate for an hour.
Roll out on floured surface. Makes about 2 or 3 double crust pies.
