Crumbly Topped Rhubarb
From the old Good Housekeeping cookbook, and looks like it’s been well-used.
Set oven to 350°
3 cups diced, unpeeled young rhubarb
2 tbsp. flour
1/2 cup sugar
1 tsp. cinnamon
1/8 tsp. salt
1 tbsp. water
Combine all in medium baking dish.
6 tbsp. butter
1/2 cup brown sugar
6 tbsp. flour
1/2 cup quick cooking rolled oats
Cream butter and brown sugar and flour and then stir in the oats. Sprinkle over rhubarb mixture. Bake for 40 minutes or until rhubarb is tender and top brown.
