Confetti Squares
People always want to know who brought these great squares, and they disappear lickety-split at a bake sale. No need to heat up your kitchen with the oven, and these are about the simplest recipe ever. Choco-holics will want to try them with chocolate chips instead of butterscotch, or a combination of half and half.
Line a pan 9” x 9””pan with waxed paper.
Or if you want to double the recipe, line a 9””x 13”” pan with waxed paper.
1/4 cup butter
1/2 cup peanut butter
1 cup butterscotch chips
Melt in large saucepan over low heat. Remove from heat, and cool “until the bottom of the pot doesn’t burn your hand when you touch it." (Don’t you wonder how painful this might be? ) Anyway, just let it cool a bit, maybe in a sink with cold water around it.
8 oz. bag of mini marshmallows
Stir in marshmallows. Pour into wax paper lined pan, and refrigerate.
Cut into squares when cool. Store in refrigerator.
