Dr. Bernstein’s Chicken Soup
Very tasty -- quite low cal and nutritious. If you add noodles, you add calories, but it’s still a pretty healthy meal. Smells so very good that Ranger dances around the stove while it’s cooking. So does Al . . .
14 oz. boneless skinless chicken breast, chopped (3 pieces of Jane’s frozen, or whatever you have)
8 cups water
12 oz. celery stalks, including lots of leaves
8 oz. onion, chopped into large pieces
1 tbsp. salt
1 or more bay leaves
Oregano to taste
Italian Seasoning to taste
Optional
3 or 4 packets or cubes of chicken bouillon, e.g., Oxo
diced carrots
½ to ¾ cups barley, add last hour instead of noodles
Cover chicken with water and bring to boil in a big pot. Add vegetables and spices. Cover and simmer for 1 ½ hours until chicken is soft. Dr. B. says soup is best if refrigerated overnight, but we eat it right away too, and it’s good either way.

Add them just 10 mins. before serving, if you like.
Beth has a good idea. She just adds the noodles to the soup she's going to use right away. Then, next time she serves it, she adds fresh noodles and they don’t “take over” the leftover soup in the fridge overnight.
