New Years Day Individual Breakfasts
An easy breakfast for the crowd leftover from the night before. Do-able even with a hangover, and they go down surprisingly easy. Just add bagels and that’s good enough already.
Set oven to 350°
12 thin slices ham
12 tbsp. cheddar or other cheese
12 eggs
Thoroughly grease muffin tins. Line each space with ham or prosciutto.
Toss in a tbsp. of cheese and an egg in each one. Bake for about 15 minutes, until egg whites are firm.
