Birds' Nests
Nana Anderson made these and filled them with homemade jam from Head Lake berries. Poppa was a good sport about taking us kids out picking with him. I had a reputation as a dirty picker, though – Nan found too many leaves in my little pail.
Set oven to 350°
1/2 cup butter
1/3 cup brown sugar
1 tsp. vanilla
1 egg yolk
1 1/4 cup flour
Salt
Mix together in bowl and roll into small balls.
1 egg white, slightly beaten
1 cup walnuts, finely chopped or ground
Roll each ball in egg white, then in finely chopped nuts and place on cookie tray. Make a well in the middle (to hold the jam) by pressing a thimble or your finger into the ball of each cookie.
Bake for 10 minutes. Take out and press with thimble or finger again. Bake another 10 minutes. Remove from oven and let cool.
Fill the well with jam or jelly.
