Stuffed Chicken Breasts
Set oven to 325°
4 to 6 boneless breasts
Halve them and slit like an envelope.
flour, salt, paprika
Dust chicken with this mixture.
2 cups breadcrumbs
2 tbsp. melted butter
2 tbsp. onion chopped
1 tsp. salt
1 peeled apple, chopped
1/4 tsp. poultry seasoning
1/4 cup hot water
Combine and stuff into breasts. Tie them closed with string.
Brown in butter in frying pan. Bake 1 hour.
Mushroom Sauce
1/2 lb. fresh mushrooms
2 tbsp. butter
1/4 cup minced onion
Brown in saucepan.
2 tbsp. flour
1/2 cup sour cream
1/2 pint whipping cream
salt, pepper
Slowly stir in flour and cook very slowly, adding creams.
Pour over chicken just before serving.
