Cream of Leek Soup
3 potatoes, peeled and chopped
2 leeks, cleaned and chopped
1 1/2 cups cream, light
2 – 3 cups chicken broth
salt, pepper, chives
Heat broth to boiling and add finely chopped potatoes and leeks (not very much of green, all of white). Boil to tender and smash til smooth or almost.
Some recipes call for putting it through the blender, but I don't normally do that. When ready to serve, add light cream, salt and pepper and heat through, top with snipped chives and/or crumbled bacon bits.
When served cold, this is vichyssoise.
