Pinwheel Cookies
These fiddly little devils look festive on a plate of Christmas cookies, so I guess they’re worth the trouble.
Set oven to 375°
1/2 cup shortening or butter
1 cup sugar
1 egg
1 1/2 tsp. vanilla
1 3/4 cups flour
1/4 tsp. salt
1/4 tsp. baking powder
Mix all together. Divide into half.
3 tbsp. cocoa or 1 square melted chocolate
Add to one half.
Cut 4 sheets of waxed paper, about 8” x 12”.
Roll vanilla dough between 2 sheets of waxed paper“like a sandwich”.
Roll chocolate dough between the other two sheets of paper.
Try to get them the same size.
Remove paper and put the vanilla one on top of the chocolate one and roll them up from the long side, like a jelly roll.
Chill a few hours or overnight until firm, wrapped in waxed paper.
Slice 1/8” to 1/4” thick and place on cookie sheet about 1” apart. Bake for about 6 minutes and start watching to make sure they don’t burn. They should be done by 10 minutes.
