Pineapple Upside Down Cake
Nana Anderson (aka Nanny Wanny) asked Poppa to write this out for me in his beautiful handwriting for a wedding shower, and their gift was the pyrex pie plate. Still use both almost 40 years later. The cake is on the thin side, and has a slightly chewy texture, all the better to soak up the brown sugar and pineapple.
Set oven to 350°
2 tbsp. butter
4 tbsp. brown sugar
5 or 6 pineapple slices
Melt butter in pyrex pie plate and add brown sugar, mix with fork. Place pineaple in it, either 5 or 6 pineapple slices or chunks are also fine. You can add marachino cherries in centre of pineapple slices if you like them.
1 egg
1/2 cup sugar
Mix together in large bowl.
1 cup flour
1 tsp. baking powder
1/4 cup milk
Mix flour and baking powder and add alternately with milk to the egg and sugar mixture. Mix and pour on top of sugar base. Bake for 3/4 of an hour.
Mom’s notes say to test it at 1/2 hour, so she must have burnt it at some point.
