Easiest Nanaimo Bars
. . . because we can’t have too many Nanaimo Bars. The filling in these is nice.
Bottom
1/2 cup butter, melted
1/4 cup sugar
2 tbsp. cocoa
1 unbeaten egg
1 tsp. vanilla
2 cup graham wafer crumbs
1 cup fine coconut
Stir together in medium bowl and press into 8”x 12” pan.
Filling
2 cups icing sugar
1/4 cup melted butter
2 tbsp. Bird’s custard powder
Enough milk to mix until fairly stiff
Mix together in separate bowl and pat on top of bottom mixture
Topping
4 squares semi-sweet chocolate
1 tbsp. butter
Melt together on low heat and spread thinly on filling. Refrigerate.
