Beth's Meatloaf
This is the one we always have, ever since I got it from Beth in the 80s.
Set oven to 375º
1 1/2 lb. ground beef
1/4 cup onion, finely chopped
1/4 cup ketchup
1 cup rolled oats or bread crumbs
1 egg, beaten
1 cup water
1 tsp. mustard
1 1/2 tsp. salt
1/4 tsp. pepper
Mix well, pack in loaf pan or pyrex baking dish.
Spread layer of ketchup and mustard mixed together over the top
(e.g., 1/2 cup ketchup mixed with 2 tbsp. mustard, or just use BBQ sauce)
Bake for about an hour.
