Dad’s Chile Con Carne
In this case, "Dad" is Poppa Anderson. It must have been one of his recipes for the November hunting camp. I see Mom typed it on her old Remington.
1 lb. beef (with suet)
Cut beef and suet on edge in small chunks.
(I guess just leave the fat untrimmed on the edges of a steak would do since nobody eats suet anymore.)
2 tbsp. bacon fat
1 1/2 tbsp. flour
1 tsp. salt
1 1/2 tbsp. chili
1 small onion
1 clove garlic, shaved
Mix thoroughly (use deep saucepan) and fry about 15 mins.
1 1/2 pint hot water
Stir intermittently and gradually add hot water. Let simmer about 3/4 hour or more, if time. ("Dad simmers his about 2 hours", mom notes)
1 small can kidney beans
Add beans before serving and heat long enough to warm beans.
Mom wrote at the bottom "SERVE & ENJOY (always good for a few burps)"
