Oatmeal Squares aka “Crunch"
I put the wrong recipe (see below) in the first edition of the Family Cookbook, but Bill gave me the real one. So simple, yet they were our favourites! Mom used to make these for us to gobble up after school.
Set oven to 350°
2 cups rolled oats
1/2 cup brown sugar
1/2 cup butter
2 tbsp. corn syrup
Press into pan. Bake 12 minutes and mark in squares. Put in fridge (to stay firm).
Wrong But Good Oatmeal Squares
Set oven to 400°
1/2 cup melted butter
1 cup brown sugar
2 cups rolled oats
1/2 tsp. baking powder
1 tsp. vanilla
Mix all together and press down in greased pyrex pan, about a half inch thick. Bake a few minutes, watching carefully. Take out when golden and cut into squares. Remove from pan lickety split, soon as you get them out of the oven.
