Beth's Raisin Squares
At the top of the recipe, Mom says, "Bill - Yes, Tommy - No, Tom & Gwen - Super", which must be the report card on these. At the bottom of the recipe, she notes, "Bonnie had these ready for us when we arrived in Squamish - March 11/82". I think it's time to make them again.
Set oven at 325◦
2 cups flour
2 tsp. baking powder
1 cup sugar
1 cup butter (NOT margarine)
1 egg, beaten
Mix and spread half in 10 x 8" pan.
Bake about 15 minutes until golden.
Filling
2 cups raisins
2 tbsp. flour
1/2 cup sugar
1/4 tsp. salt
1 cup boiling water
Bring to boil, simmer for 10 minutes.
1 tsp. butter
1 tbsp. lemon juice
Add and mix.
Pour over bottom layer mix while hot.
Sprinkle other half of flour mixture over top of raisins.
Bake for 20 minutes or until golden brown.
