Cornstarch Shortbreads
Mom made these as rounds and pressed cross hatches into them with the back of a fork.
Set oven to 325°
1 cup butter
Cream butter.
1/2 cup cornstarch
1/2 cups icing sugar
1/2 tsp. salt
2 cups sifted flour
Sift dry ingredients four times. Work with spoon then knead “until it cracks”.
Roll into balls and press with fork tines. Bake 10 minutes. Makes 5 dozen.
