Caramel Pie Filling
I think this is similar to what they call Shoefly Pie in the American south. Also something like a pecan pie without the pecans. It was my childhood favourite but I had to fight off Beth, and sometimes even Mom! It’s not a very deep filling, but it’s so rich you don’t need it any deeper.
1 cup brown sugar
butter size of an egg
Brown well in saucepan.
1 cup hot water
Add to pot, whisking in.
1 egg yolk slightly beaten with bit of water
2 tbsp. cornstarch
Add the first pot of stuff to this and cook until clear, then add vanilla. Pour into baked pie shell.
“Use butter not margarine!” says Mom.
