No-Cook Chocolate Marshmallow Roll
I wrote on this that we should use mini-mallows next time instead of chopping the bigger ones. These are messy to get out of the bowl and roll, but they sure taste like “the good old days”.
1 1/2 cups icing sugar
2 eggs
Mix together in large bowl.
4 squares semi-sweet chocolate
Melt chocolate in a cup in saucepan of water.
1 pkg. (8 oz.) coconut
Add coconut to chocolate, then mix into sugar and egg bowl.
48 marshmallows, cut in 1/4s (try a bag of minis)
graham wafer crumbs
Add marshmallows to bowl. Shape into long rolls maybe 1 1/2” to 2” in diameter, and roll in graham wafer crumbs. Wrap in waxed paper and place in fridge for a couple of hours or more. Slice and serve.
