Macaroons
These are the kind Mom made out of coconut. She notes it makes 3 dozen and I remember they left the plate rather quickly.
Set oven at 375º
3/8 cup white sugar
3/8 cup brown sugar (Mom notes that together that = 3/4 cup sugar)
1/2 cup melted shortening
1 large egg, beaten
Blend.
1/2 cup shredded coconut
1/2 tsp. vanilla
Stir in.
1/2 cup all purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
Mix together.
2 cups rolled oats
Add gradually.
Drop by teaspoonfuls 2" apart. Bake 12 to 14 minutes, until golden brown.
Cool 1 minute; remove from pan.
