Pork Paysanne
This recipe was page 10 of a letter from Mom in the 70s. On the back, page 9, Mom’s telling me how cute, funny and clever a little fellow Gordie is. He was eating vegetable soup, and knew all the letters. Even turned an L upside down and said “Look Nan, a 7”. About this pork, Mom assured me “Tommy just loves this”.
Pork roast
1 1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. paprika
Rub spices on pork. Bake for 1 hour.
onions, peeled
potatoes, peeled
Place in pan of boiling water and let stand covered for an hour. Drain veggies and place around roast. Pour 1/2 cup apple juice or wine over it – Mom notes “I don’t usually bother with this”.
1/8 tsp. garlic powder
1/2 tsp. savory
Spread this on the pork and cook another hour or longer if needed.
“It’s very tasty, hot or cold,” says Mom.
