George's Fruit Bread
George has a number of excellent breads he's perfected. Here's one I loved when we visited in 2009. You can buy semolina flour made by Red Barn at the grocery store, or at Bulk Barn.
1 1/4 cups plus 1 tbsp. warm water
1 1/2 tsp. sea salt
3/4 tsp. sugar
2 1/4 cups semolina flour
2 tsp. yeast
Put in bread machine and turn it on. George's machine's cycle is called Italian and takes 3 hours, 19 minutes. My Black & Decker setting for Sweet Bread (3 hours 50 minutes) is my closest match.
1 1/4 cups California golden raisins
1 1/4 cups chopped dried apricots
handful currants
Add these to the machine when it you hear the Add Ingredient beep.
