Snow Peak (aka “Angel Food Goo“)
Mom used this on the angel food cakes she made for showers and other feminine occasions. You’ll remember the pretty little dolls, a little smaller than a Barbie, she placed in the middle of the cake. Her Snow Peak dress was a fluffy, frilly work of flowery art.
1 1/4 cups corn syrup
In medium saucepan, bring syrup to boil.
2 egg whites, beaten to soft peaks
pinch salt
Add salt to egg whites, and slowly pour them into the syrup, beating with electric mixer until peaks form when beater is raised.
1 tsp. vanilla
Stir into mixture.
