One day, some years ago, I sat at Mom's Head Lake kitchen table reeling off the many wonders of my new friend at the office. She was funny, she was smart, and she cooked cordon bleu! And there was this one jicama salad she made, just so fantastic! Mom took the time to be suitably impressed as she chopped and stirred, whipping up her usual delicious family dinner and her only comment was "What the heck is a hickama?"
That really stuck with me.

These are their recipes. I've added some third generation classics, but not a jicama in sight.
What the heck IS a "hickama"? Jicama (pronounced hee-kah-mah) is a white fleshed root vegetable. Also called Mexican potato, it can be eaten raw or cooked.
