Bowen Island Carrot Cake
Every self-respecting hippy wife used to know the secret to baking a killer carrot cake.
Set oven to 350°
Butter and flour a 13” x 9” pan
2 cups vegetable oil
2 cups sugar
3 large eggs
3 1/3 cups flour
1 1/4 tsp. baking soda
1 1/4 tsp. baking powder
2 1/2 tsp. cinnamon
1 tsp. salt
2 1/2 cups grated carrots
1 can crushed pineapple and juice (398 mL)
1 1/3 cups chopped walnuts
1 1/3 cups sultanas
Combine all ingredients and mix thoroughly. Pour into pan, and bake for 65 to 75 minutes or until done. Remove from oven and let pan stand on rack until cool.
