Tom’s Shortbread
Made these in 2006 to take into Orillia to Dad for Christmas, because Mom named
them after him and her note said he loved them. We snuck a few and thought they need chocolate icing or something else to boost the flavour. Also, be sure to knead them well, maybe 5 to 10 minutes to mix in the flour. Mom's notes said the recipe made “22 stars, 46 small circles pressed with glass bottom”.
Set oven to 325°
1 lb. butter
1 1/4 cups icing sugar
Cream butter and sugar.
4 cups flour
1/2 tsp salt
Sift in flour and salt and knead for at leastg 5 minutes. Roll to 1/4” thick and cut out shapes. Bake for 10 minutes.
