Jill’s Oatmeal Cookies
On the top, Mom wrote "Nicole's Favourite" and on the bottom
of this one she says, “M –m – m delicious!”
Preheat oven to 300°
Grease cookie sheet.
1 cup melted butter
1 cup white sugar
1 cup brown sugar
1 cup cake and pastry flour
1/2 tsp. baking soda
1 tsp. salt
1 egg
2 1/2 cups Quick oatmeal
In large bowl, mix in order listed.
Drop small spoonsful onto buttered cookie sheet. Smaller cookies cook crisp and lacey. Mash flat with back of a fork. Don’t place them too close together – they spread.
Bake until golden brown, about 12 minutes or less. Remove from tray while hot, or they’ll stick to the cookie sheet.
